How to remember the difference between este and ese

This” and “these” have T's;

That” and “thosedon't!

That is, the forms este, esta (this) and  estos, estas (these) have a T in them.

The forms ese, esa (that) and  esos, esas (those) don't have a T in them;

Note: Aquel, aquella, etc. also mean “that”,  but refer to something further away than ese, esa.
